Cascavel Rose Spice Rub
Mild Casacavel chilies add a hint of dried cherry and pepper sweetness, organic rosehips brighten it and mint adds a lively note. Cumin, kosher Pacific flake salt and black pepper let the flavor of the meat express itself. Use as a dry rub on Chianti braised beef or roast lamb. Combine with olive oil, red table wine and meat drippings to make a garnish sauce.
